Edible Flowers Under New Ownership – Headquarters Relocated to Missoula Montana

Edible Flowers, a 9 year old company which specializes in organic flower based food products has recently been purchased by Heidi Foley of Missoula, Montana. The headquarters have been relocated to Missoula Montana.

Originally based in Santa Fea, New Mexico, the internet based business has drawn an international customer base and has received recognition and coverage from magazines across the nation including, “Good Housekeeping”, “Cooking Lite” and featured on television’s “The Food Network.”

Edible Flowers uses at least 1 organically grown flower in each of their products which range from gourmet vinegars, salad dressings which double as sauces and marinades, teas, party dips and flower confetti used for topping deserts, salads etc.

“The idea of working with flowers in food is starting to be revisited by chefs all over the world. It’s making a real come back in the US and Europe. That combined with the growing organic movement tells us that there is a real need and desire for these types of products,” said Foley.

Foley, a certified public accountant of 15 years has always dreamed of leaving the corporate world and starting a business of her own. “I was unsatisfied working for someone else and I wanted to be more creative.” Foley said.

“I want to find a way to give back to the people I work with and I didn’t find that in my corporate job.”

In November 2003 Foley purchased Edible Flowers and left the corporate world.

Now working full time at Edible Flowers, Foley has moved the business to Missoula Montana. The Corporate offices now operate out of a remodeled 1 room school house, built in 1895. Foley is utilizing local co-packers and drop-shippers and continues to build both internet and local sales.

Edible Flowers now offers over 40 products and is available for both retail and wholesale.

Pushing palatable petals

In a one-room schoolhouse out by the airport, there’s a worthy lesson being taught: You can turn a passion into a career. After 15 years as a certified public accountant in Missoula, Heidi Foley was itching for a more creative job. Her passions: flowers, food, and a desire to give back to this community. So when she got online and saw that the 9-year-old Santa Fe-based company Edible Flowers was for sale, Foley bit. Last November, she became the internet-based business’ new president and CEO, though her friends still title her “the great adventurer.”

“I’m a lavender freak,” says Foley from Edible Flowers’ new headquarters in the 1895 schoolhouse. “And I’ve always thought it would be so great to do a business with flowers. The reason this appeals to me so much is that I’m able to use a different part of my brain for a while, to do something fun and creative.”

Edible Flowers indeed has crafty flair. From gourmet vinegars to flower confettis, the company sells over 40 products, both retail and wholesale, each of which contains at least one organically grown flower. Tulip vinegar and hollyhock lavender vinegar are among the company’s best-sellers; Foley’s personal favorite is the chili squash blossom salad dressing.

Foley plans to expand the Southwest-inspired offerings to include Pacific Northwest flowers such as violets and orchids. She’s started working with local lavender farmer Lori Parr Campbell, and has also partnered with non-profit packing company Mission Mountain Markets in Ronan. Expansion plans include a line of bath and relaxation flower products.

While Edible Flowers is new to Missoula, Foley swears that people have been eating flowers for ages. “The Victorian Era was a huge time of edible flowers among the very wealthy,” she says. “It was a sort of status symbol if they served you edible flowers.” Now we can all be royalty: From March 26–28 at the Missoula Home & Garden Show, Foley will have a booth with samples of petal confetti, sparkling lavender sugar, red basil dressing and more.
