For ingenuity, look to southern Idaho’s food entrepreneurs

Liz Roquet needed a job when Icebreaker announced it was moving from Ketchum to Portland, Ore.

Instead of scanning the want ads, she decided to start her own business – Lizzy’s Fresh Coffee.

The business has taken her to the lush green hillsides of Colombia where she participated in a cupping contest. It has outfitted a team of Third World soccer players in uniforms. And it’s provided her customers with coffee blends and labels that are uniquely theirs.

The spark of ingenuity and perseverance that has made Roquet so successful can be found among dozens of food entrepreneurs ranging from Twin Falls to Ketchum who have thought out of the box to get that extra edge. Here’s a look at four of them.
