Montana State University turns garbage into gold

Zack Rogala and Deb Crawford shoved a big mound of broccoli stalks, onion skins, carrot peelings and pepper stems into a dumpster Friday, demonstrating just a fraction of the kitchen waste that gets tossed every day at Montana State University.

“This is the start of what we’d like to compost,” said Rogala, 23, a student from Darby and treasurer of NECO, the Network of Environmentally Conscious Organizations.

Crawford, marketing and sustainability manager for MSU’s Food Services, said students and members of MSU’s kitchen staff have been asking for years for a way to compost the food thrown daily into the garbage.
