North Dakota onion plant plans expansion

This town’s largest employer is already taking the teary toiling out of peeling onions, and now it’s looking to slice and dice them, too.

Kidco Farms Inc. wants to expand operations to Medina, about 20 miles away, in a building that couldn’t make it as a cheese plant or as a place for packaging pre-made salads.

Processed onions are a hot item in food service circles, said Rod Holth, an onion and potato grower, and one of Kidco’s four shareholders.

The idea is to avoid the middleman and sell directly to large restaurants and food service operations, he said.
